To serve
PREPARATION METHODMix a little of your thyme with the meat and season with salt and pepper. Divide the mixture into four and shape each portion into a burger with your hands. Put the burgers onto a plate and cling-film them before putting them in the fridge for at least an hour.To cook the burgers, heat the rapeseed oil and butter in a frying pan with the garlic cloves and the remaining thyme, Fry the burgers in your flavoured cooking oil for two minutes on each side or three minutes if you prefer them well done. Finish the burger by topping them with a slice of cheese and spoon the herby garlic butter and oil over the top, as if you were cooking a fine quality steak. To accompany the burger we like finely sliced onion, a crunchy lettuce, like little gem and sliced tomatoes. To top the burgers, a slice of Lancashire or Stilton Cheese and of course salt and freshly ground black pepper to season. Toast your bread rolls for the perfect finishing touch and serve with onion rings and lashings of Great British Proper Tomato Sauce. Heat the oil, we recommend a deep fat fryer for this, to 180 -185C. While the oil comes up to temperature separate the onion slices into individual rings and dust them in the seasoned flour. Add them to the dish of whisked egg and turn them around until they are completely coated and then bread-crumb them. Toss the bread-crumbs over the eggy onion rings until you have a good even coating, they are ready for the fryer. Fry the onion rings,a few at a time, until they are crisp and golden. Drain well on kitchen paper to finish. |
